Brown rice pilaf

This is the easiest dinner in the world to make, especially if you have leftover rice. I made it the night before and we took it to the theatre to eat beforehand. Vary the fruit if you like – dried apricots are especially good.

Brown rice
Handful of dates
Handful of dried mango (or tinned)
Handful almonds
1 tsp cumin
1/2 tsp cinnamon
Red onion
2 tblsp orange juice
2 tsp lemon juice

Cook the rice until tender, then drain and rinse in cold water. Fry a red onion in a little oil until just starting to go translucent. It’s nice with a bit of bite to it. Roughly chop the almonds, dates and mango. Toss the rice with fruit, nuts, spices, onion and juices.
