This super-quick pudding uses a no-bake cheese mix as a topping for digestive biscuits to create a cheesecake type dessert.
4 digestive biscuits
4 balls crystallised ginger in syrup
100g white chocolate
50g light cream cheese
50ml double cream
Finely chop the ginger. Whip the cream until it forms soft peaks and then beat in the cream cheese until smooth. Melt the chocolate in a bain marie until liquid. Stir the chocolate and chopped ginger into the cream mixture. Pop in the fridge for at least 2hours. Spread the cream cheese mixture on top of the biscuits. I didn’t chill mine for very long because I was too greedy, which is why mine don’t look very pretty!
