Another not-vegetarian post, but this was birthday dinner for my grandma so also not made in the bedsit. It’s a bit of a faff but really is very tasty…
Serves 4 greedy people
2 salmon steaks
2 pieces smoked haddock
1/2 pint milk + extra for the mashed potatoes
2 cloves garlic
2 bay leaves
Green herbs (I used mixed herbs, but dill would be nice)
5 or 6 big potatoes
Butter. Lots of butter
Cream cheese/garlic cream cheese
Green veg/sweetcorn to serve
Dice the onion and sweat in a little bit of oil with the garlic and bay leaves for 3-5mins until softened. You need to use a big, wide, deep frying pan.
Add the fish to the pan and pour over enough milk to just cover the fish. Poach for around 15mins until the fish is cooked through (I used frozen fish, it will be quicker with fresh!). Scoop out the fish and leave it to cool, then skin it and flake into pieces.
Peel and chop the potatoes, then boil until soft. Drain, and mash with butter and milk until creamy. Add black pepper and leave to stand for a few mins.
Turn the heat up under the milk and add cornflour. Stir until it thickens into a nice white sauce. I added a big spoonful of garlic cream cheese to my sauce, but it’s not essential!
Put the flaked fish in a big, oven-proof dish and turn the oven on to about gas mark 6. Pour over the white sauce.
Add the mashed potatoes – carefully so they don’t sink! – and spread them out into an even layer.
Add grated cheese and bake for 15mins until golden and bubbling. Serve with some peas, sweetcorn, green beans and/or broccoli.
