Lentil soup

Warming, spicy lentil soup, perfect for a cold day. Serve with bread, if you like.

Serves 4

180g red lentils
1 red onion
3 garlic cloves
1 tsp ground coriander
1 tsp turmeric
1 tsp cumin
1 tsp chilli powder
1/2 tsp paprika
Splash white wine
Olive oil
750ml vegetable stock (cube or Boullion powder)
1 carton passata
1/2 a lime

Peel and chop the onion and garlic, then sweat gently in a little bit of olive oil. Add the spices and stir, then add enough white wine to cover the onions and turn up the heat.

Bubble the wine for 3mins, then add the lentils and stock. Bring to the boil and then simmer for 20mins, until the lentils are soft.

Add the tomatoes and simmer for 5mins, then add the juice of the lime and serve.
