Pear, almond and chocolate cake

We had friends round for an apocalypse party, and if the world’s going to end I want to go full of cake. The world didn’t end, but we ate the cake anyway. I filled and covered mine with ridiculous chocolate and amaretto mousse (recipe another day) which made it insanely rich, but it’s really tasty as it is!

You will need:
120g plain flour
200g butter
180g brown sugar
2 eggs
50g ground almonds
20g cocoa powder
4 conference pears
4tblsp amaretto
2tsp almond essence
2tsp baking powder

Grease and line a 9″ cake tin. Pre-heat the oven to gas mark 5. Peel, core and slice the pears. Cook over a low eat in half the amaretto and a splash of water, until softened (about 10-15mins, depending how ripe your pears are). Cream together the butter and sugar until really light and fluffy. Beat the eggs, and add eggs and flour alternately in 3 or 4 goes, mixing well each time. Stir in the cocoa powder, baking powder, ground almonds, almond essence and the rest of the amaretto. Finely chop half of the pears and stir them into the mixture. Add a little of the cooking liquid if the mix is dry.

Lay slices of pears across the bottom of the prepared cake tin,  then pour in the mixture. Bake for 40-45mins until a skewer in the middle comes out without raw batter stuck to it.


Immediately turn out of the tin upside down onto a plate and allow to cool.
